Vinification
Elixir from a millimeter, adjusted vinification.
Supreme maturity of grape determines the harvest date.
Traditional maceration for 40 days.
Malolactic fermentation on the skins.
Racking, filtration and ageing for several months before bottling.
Tasting
Deep red color with garnet tints. Teasing, Secret Rouge is aptly named. Its complex aromas still reveal some clues: scent of garrigue blown away by a summer breeze, old-fashioned black olive mash, subtle toasted notes, caramel from our childhood!
Crescendo, the sensation of power reveals a fundamentally Mediterranean wine.
Well balanced, the structure finally outlines the design of the secret and announces a smooth and generous finish, thanks to the tannins so melted.
Silky and velvety… A Red carpet for the taste buds.

La cuvée « Secret Rouge » provient d’une sélection des plus anciennes vignes d’Alma Cersius, sur une mosaïque de terroirs. Les parcelles et pieds de vignes sont porteurs d’histoire et offrent des baies rares et remarquables.
Les qualités organoleptiques de ces anciennes vignes sont magnifiées par le travail contemporain des Hommes. C’est dans ce savant mélange de tradition et de modernité que réside le secret de cette cuvée, secret qui ne se dévoile qu’à sa dégustation.
Vinification
Elixir issu d’une vinification millimétrée, ajustée…
Maturité extrême des grappes déclenchant la date de vendanges. Macération traditionnelle de 40 jours.
Fermentation malolactique sous marc.
Soutirage, filtration et élevage de plusieurs mois avant la mise en bouteille
Dégustation
Robe rouge profond aux reflets grenat.
Taquin, Secret Rouge porte joliment son nom. Les arômes complexes en dévoilent tout de même quelques indices : parfum de garrigue soulevée par un vent d’été, de purée d’olives noires à l’ancienne, de subtiles notes de grillé, de caramel lointain de notre enfance !
Crescendo, les sensations de puissance révèlent tout le pouvoir d’un vin fondamentalement méditerranéen.
Bien composée, la structure esquisse enfin le dessin du secret et annonce une finale douce et généreuse, grâce aux tanins si bien fondus.
Soyeux et velouté… Un tapis rouge pour les papilles.
